Raw Hazelnut Spread ("Nutella")


I adore chocolate.  I know that I’m in good company when I proclaim it.  I also love nuts.  As a vegan, you eat a LOT of nuts.  I especially love nuts in desserts.  Soaked cashews make a heavenly base for any vegan cream sauce or creamy dessert.  The power of a soaked cashew will never fail to excite me!

The nut of the hour for this post is the hazelnut.  I actually haven’t experimented much with hazelnuts because I was under the impression that they were exponentially more costly than other nut options.  Then…I found an amazing deal on a bulk bag via Amazon (if you live in the States and are interested in purchasing hazelnuts, check out the ones I got here).  My 4 lb bag of hazelnuts arrived an evening this week after work.  With little time to create a more involved treat, I decided to throw the nuts into the food processor and see what I could make.


Here is my take on Nutella, raw vegan style.  This is also paleo and gluten-free friendly!  Anddddd….it takes just a few minutes to make.  You can enjoy it on toast, in your morning oats, with apples or bananas as a snack, or (obviously) right out of the jar.


I don’t really think this recipe needs more introduction than that.  The pictures and TASTE speak for themselves.

Ingredients (Approx enough to fill 1 pint j)

  • 1 1/2 cup raw hazelnuts
  • 1/2 cup raw cacao powder
  • 1/4 cup coconut oil
  • 1 cup dates (pits removed)
  • 1/2 cup water


1. Blend together the hazelnuts using S shaped blade in food processor. Blend until consistency is like small crumbs (think of almond meal).

2. Add the cacao powder and blend.

3. Add remaining ingredients and blend until fully mixed.

4. Voila! That's it. Move the mixture to an airtight container and store in refrigerator.
